‘Their is a real manual nature to our industry. When farmed, coffee is picked by hand, put on someone’s back, and loaded on a truck. All speciality coffee will be protected from the journey to here. From the moment it’s processed to the point it gets to us, it takes three months. There’s a journey to be had there, and coffee will take on its environment. It will change tastes, it’s got to go across the sea, not taste salty – not be damaged by the sea – it’s got to be protected by a rain primer. While that means your coffee is protected, it also means it’s harder to handle – gone are the days when you used to hook a bag. ’
